Can’t Get Enough Crab Artichoke Dip

Ingredients

1 small jar or can artichokes in water, drained and sliced

1/2 cup grated or shredded Parmesan cheese

4 tablespoons light mayonnaise, plus more if desired

1/2 teaspoon Dijon mustard

2 tablespoons chopped flat leaf parsley

Kosher salt and black pepper

1/2 pound crabmeat

1/4 cup roasted red peppers, drained and chopped

1/4 cup shredded mozzarella cheese

Directions

  1. Pre-heat the oven to 350 degrees.
  2. Add the artichokes, cheese, mayonnaise, mustard and parsley in a medium bowl. Season with kosher salt and pepper. Stir.
  3. Add the crab and the roasted red peppers. Stir gently to avoid breaking up the crabmeat.
  4. Place the crab dip in a shallow oven-proof baking dish.
  5. Top with the mozzarella cheese.
  6. Bake for thirty minutes or until the cheese is lightly browned around the edges.
  7. Serve immediately with water crackers or toasted crostini and a chilled dry Chardonnay or Merlot.

*To use Can’t Get Enough Crab Artichoke Dip as a topping for fish, preheat the oven to 400 degrees. Follow the directions to step 3. Season the fish with kosher salt and pepper. Mound the crab mixture on top of the fish, about two tablespoons per portion. Place the fish in a shallow baking dish and bake twenty to twenty-five minutes uncovered. Note: cook fish 10 minutes per inch, adding several minutes to the cook time with the addition of the Can’t Get Enough Crab Artichoke Dip. Yield: enough for four fish portions.
