Love eating calamari when you eat out? Want to have it when you eat in, save money and calories, but don’t know how to cook it? I had this Sauteed Calamari at BlackFin Bistro in Key West. It was tender, mellow and meaty. Here’s how you can enjoy this, too…(adapted from memory)
Buy unbreaded calamari rings (also called squid). Or if you’re ambitious, buy whole and slice it yourself. Rinse, dry and salt the rings. Heat equal amounts butter and oil in a large skillet on medium-high heat, enough to cover the bottom of the pan. When oil shimmers, add thinly sliced garlic, stir, careful not to brown. Add unbreaded calamari rings, stirring quickly to coat (about 1 minute-no more or trust me it will be tough and chewy). Toss in chopped parsley, stir and remove from heat. Top with toasted, chopped walnuts. Serve immediately. Pair with warm, crusty French bread for dipping and Chianti for sipping. Enjoy!
