Don’t you love pizza?
Me, too.
I especially love those little pre-made pizza crusts. They’re perfect for one, two or served at a tapas-style gathering.
Open your refrigerator, pull out a few items, or a lot, if that’s your style, top and bake.
Here’s what I found in my ‘fridge last night for my pizza.
Ingredients
- 1 pre-made small pizza crust
- 3 Tablespoons of herb goat cheese
- 2 Teaspoons jalapeno infused olive oil, made ahead
- 2 slices of roasted red pepper, or four small pieces
- 2 Medjool dates, pit removed, torn in pieces
- 1 egg
- Black pepper
- Bottarga
- 1 sprig fresh mint
Directions
- Pre-heat oven to 450 degrees
- Line a baking sheet with parchment paper.
- Place pre-made pizza on paper-lined baking sheet. Spread jalapeno olive oil on pizza.
- Spread goat cheese around the pizza, like a ring around the edges, keep it in chunks to support the egg.
- Arrange the roasted pepper and dates on the pizza.
- Season with black pepper.
- Bake in the pre-heated oven for 10 minutes.
- While the pizza is baking, chop the mint.
- Remove the pizza from the oven.
- Using a microplane or small grater, shave Bottarga over the entire pizza. Go ahead, be generous.
- Slice and serve immediately.
