Living in Western Kentucky has a few drawbacks for a seafood diva like me. Don’t get me wrong, I like it here and I make the most of my situation. For instance, I enjoy the cooler weather, the wildlife and the simple lifestyle that my small country town offers. But since I moved here from Florida a few months ago, I crave fresh seafood more than ever.
Fortunately, frozen seafood has come a long way and now eating seafood while living in the middle of the country is not only readily available, its also good. Scallops are the perfect frozen seafood; they cook quickly, they have a definitive, sweet ocean flavor and they’re a sustainable seafood choice.
